Tortilla Soup

From the Kitchen of Alice Martinez

 

1  can Mexican flavored diced tomatoes (your choice)

1  can fat-free refried beans

1  can pinto beans

2  T olive oil

1  clove garlic, minced

1  yellow or white medium onion, diced

1  green pepper (cleaned of seeds) diced

2  cans vegetable stock

2  level T of ground cumin

salt and pepper to taste

chik seasoning to taste

1  small bag of tortilla chips

2  cups sharp cheddar cheese, shredded

Saute garlic,onions and pepper in olive oil till slightly softened.  Add the stock, refried beans, pinto beans, tomatoes.  Stir to blend well.  Add seasonings, checking for taste.  Heat to bubbling.  Serve in bowls with chips and cheese on top!  Rico!  (Delicious in Spanish)
