Tofu Quiche* From the Kitchen of Serendipity Ranch |
1 c water 1 T lemon juice 1/2 c raw cashews 1 t salt 1-14 oz. block tofu, drained 1 t sweet basil |
2 T cornstarch 1/4 t oregano 2 T onion flakes 1/4 t garlic powder 2 c vegetable*, drained of all liquid

Liquefy cashews and water. Add remaining ingredients except vegetable. Liquefy. Stir in vegetable. Pour into Pam sprayed 9x9 in. casserole dish. Bake at 350 degrees F. for 1 hour. Sprinkle top with paprika and parsley for decoration. Serves 6. * Examples: greens, onions, squash, zucchini, broccoli, or any mixture of vegetables. |
