Lorna's Black Bean Soup*

From the Kitchen of Serendipity Ranch

 

8 cups water

1 large onion, chopped

1 cup celery, finely chopped

1 T salt

1 T garlic powder

1 T onion powder

1 T McKay's Beef seasoning

1 T Vegetable Soup Base

1 - 1# bag of black beans

As many varieties of mushrooms as you wish to put in the soup. Our family likes lots of mushrooms, so I use lots.

Fill your pan with water and turn on the stove! Put in all ingredients and boil for 3 or 4 hours. The longer, the better!

For mushrooms -- I use  fresh ones that are not too high priced. Varieties such as: Button, Portebella, Oyster, Shitake. I also use at least one package of dried mushrooms of various varieties that I cannot get fresh. When I cannot get Shitake fresh, I will use them dried. I dump them in the pot to rehydrate them! Guess I do not worry much about the fact that they might be dirty. I use the packages that are made for putting into soups, so figure they are pretty well ready for cooking.
