Fruit Bread*

From the Kitchen of Serendipity Ranch

 

1 T Egg Replacer

1/4 c water

1 c sugar

1/4 c oil

1 c desired fruit*

flavoring of choice

1 t salt

1 t baking soda

2 c unbleached flour

Mix together all ingredients. Bake in oven at 350 degrees for 35 min. Makes four mini-loaves.

* Desired fruit:

banana = 3 large bananas + 1 t vanilla

pumpkin = 1 c pumpkin + 1/4 t cinnamon

pina colada = 2 c crushed pineapple, 1/2 c coconut; 1 t coconut flavoring

choc-cherry = 1 can cherry pie filling, 1 t cherry flavoring, 1/2 t almond flavoring, 6 oz. chocolate chips

macaroon = 3/4 c Edensoy, 1/2 c coconut, 1 t coconut flavoring, 6 oz. chocolate chips

orange = 1 T grated orange peel + 1 c chopped orange

Sugar Free Fruit Bread

Leave out the sugar in the above recipe and use the following ingredients:

CHERRY — 2 t cherry flavor; 1 c cherries; 2 T cocoa; 1/2 c cherry juice concentrate.

PINEAPPLE/ORANGE/COCONUT — 2 t coconut flavoring; 1/2 c coconut; 1 c pineapple/orange juice concentrate.

APPLE — 1 c apples; 1 c raisins; 1 t cinnamon; 3/4 c water.
