Better Butter*

From the Kitchen of Lisa Krum

 

1/2 c water

1 1/2 c frozen corn

1/4 c water

2 1/4 t salt

1 1/2 c olive oil*

3/8 t butter flavoring

1/2 T lecithin granules

1 1/2 T Emes gel, plain

9 ice cubes

Boil the first two ingredients while you prepare the rest of the ingredients. Blend the next four ingredients (water, salt, butter flavoring, and olive oil). Put the lecithin and Emes in one container. After the corn is cooked, add it to blender. Dump the lecithin and Emes in on top and blend right away. Blend on high until creamy. While it's blending get the ice cubes ready. Add the ice cubes one at a time, until blended. Pour into flat containers, watching for stray pieces of ice. Set in fridge, and leave uncovered until cool. Enjoy!

*NOT extra virgin, it's too strong.
